From Pop-Ups to Powerhouse: Tina Fahnbulleh Dishes on Gold Coast Ghal Kitchen's Journey

Tina Fahnbulleh's passion for cooking began at the tender age of four, leading her on a flavorful journey from Philly to Minnesota and finally to Seattle. Her culinary adventure started with pop-ups and catering gigs, eventually blossoming into the beloved Gold Coast Ghal Kitchen seven years later.

"I didn't think about having a brick-and-mortar until about two years ago," Tina shared with Trae Holiday. "I just wanted to cook and make people happy."

The evolution of Gold Coast Ghal Kitchen's menu has been a testament to Tina's adaptability and customer-focused approach. What began as a soft launch has transformed into a dynamic, ever-changing culinary experience. Jollof rice, initially a weekend-only treat, became a daily staple due to popular demand.

Tina's commitment to using local, seasonal ingredients shines through her menu. "In the winter, we use potato greens, and in the spring, we use jute leaves," she explained, highlighting her dedication to incorporating the Pacific Northwest's bounty into her West African-inspired dishes.

Vegans and meat-lovers alike will find something to savor at Gold Coast Ghal Kitchen. From the vegan goat peanut soup to the authentic goosey with melon seeds, Tina ensures there's a dish for every palate.

On February 8, 2025, Tina will join fellow culinary artists at the "Soul of Seattle" event at Black 41 in Belltown. This gathering of black excellence in the food and beverage scene will feature about 20 vendors, including well-known establishments like Lennox, Communion, Umami Kushi, and Pizza by Ruffin.

"We'll all be there. showcasing our amazing food and talent," Tina enthused. The event, now in its fourth year, began during the COVID-19 pandemic to support black-owned businesses.

As Tina prepares her peanut soup, vegan options, and fufu for the event, she reminds us of the importance of ongoing support for black-owned businesses. "We still need customers to come in to pay rent and pay our employees," she emphasized.
