Besa Gordon Goes Behind The Scenes With T-Mobile Park Executive Chef Javier Rosa

The Mariners are back in town and are the hottest they’ve been all year, but they’re not the only ones bringing the heat at T-Mobile Park. Besa Gordon checked in with Executive Chef Javier Rosa to hear about some new food offerings at Edgar’s Cantina that you should be sure to check out if you’re heading to the ballpark this week.

“We are in the area where we make magic,” Rosa said. “If we’re going to do something, we’re going to do it right.”

Part of that means Rosa is insistent upon using fresh, local ingredients. The fish at Edgar’s, for example, comes straight from the pacific. 

“We don’t do any frozen food,” Rosa said. “Our brisket is smoked in house. You’re in Seattle, why would you use frozen when you have the best seafood around.”
