Chef Trey's love for Caribbean food was sparked by visits to family on the East Coast and in the Caribbean. Recognizing the lack of authentic Caribbean representation in Seattle, he started a food truck, eventually leading to the opening of Jerk Shack in the Central District.
"The heart of CD is where I was raised," Chef Trey explained. "I grew up on 32nd and Cherry was raised here, went to Garfield High School. I have deep roots here, in this community, in this neighborhood, so it means a lot. Means everything."
While many customers come to Jerk Shack expecting traditional Caribbean dishes like oxtail and curry goat, Chef Trey's menu offers a unique twist.
"We want to try to bring Caribbean flavors that are recognizable to our culture that is here and as well as bringing the flavor profiles that is familiar with our community and us and still not compromising the flavor profiles of Caribbean food," he said.
This innovative approach has garnered praise from both locals and visitors, solidifying Jerk Shack's place as a must-visit Seattle eatery.
For Chef Trey, Jerk Shack is a way to connect with his community and share his passion for food.
"Everything on that menu you can't go wrong with," he proudly stated. "A lot of people come to Jerk Shack looking for traditional Caribbean fare like oxtail or curry goat or something like that. We only do those dishes as a special."
