Chicken, Beignets, and Beer: Sunday Brunch at Metier in Seattle’s Central District

Last week, Besa Gordon headed to the Metier Brewing Taproom in the Central District for their newly-launched Sunday fried chicken and beignet brunch. With the food provided by world-renowned Chef Harold Fields of Umami Kushi, Besa Gordon sat down with Metier Brewing Owner and Co-founder Rodney Hines and they spoke about the inspiration behind Metier and why Rodney does what he does as well as the importance of Black-owned breweries. 

“This is home,” Hines said. “I live near here and this is my community. It all starts with the community here in the Central District.”

We also got a behind the scenes look at Chef Fields and the preparation of his famous fried chicken and beignets. Fields has worked in restaurants around the world, and brings those varying influences and experiences to the kitchen with Umami Kushi.

“It’s not very often that I go places and get fried chicken like this,” Gordon said. “I don’t know what he did back there but he’s a genius.”
